 300 grams of still green priest's ear beans

 1 unit of onion

 2 garlic cloves

 2 tablespoons of olive oil

 1 teaspoon of red pepper (optional)

 chopped chives

 Black pepper

 salt

How to make Braised Father's Ear Beans:

To cook Father's Ear beans, start by washing them well and cutting off the lint.

Blanch the beans by placing them on the fire in a pan with water and salt. When boiling, cook for 1 minute, remove and place in a bowl of ice water to stop cooking.

Then place a frying pan over medium-low heat with the oil, the minced garlic cloves and, if you like, the red pepper to give it a smoldering touch. Let it brown slightly, add the beans and sauté for just 1 minute so as not to overcook.
