Green noodles recipe
Green noodles are a very homemade recipe, like a healthy grandmother's dish, typical of the Peruvian geography. This dish is a variant of the well-known pesto pasta and can be made with any type of long pasta, whether round or flat. Ingredients to make green noodles:
1 package of Noodles
1 pinch of salt
500 grams of Spinach
50 grams of Basil ground
1 can of evaporated milk
250 grams of Cheese
3 garlic cloves
1 unit of Onion
How to make green noodles:
To prepare the green noodles we first have to cook the pasta. In a pot we will put 2 and a half liters of water with a little salt and when it boils, we will add the pasta and cook it for about 8-10 minutes. Then we will drain the noodles and pass them through cold water to prevent them from sticking.
To start with the green noodle sauce, the first thing to do is pre-cook the previously washed spinach in boiling water. Once blanched, we immerse them in ice water to stop cooking and blend them with the milk and half the cheese.
To prepare the dressing for the green noodle sauce, sauté the garlic, onion and ground basil and when the garlic is well cooked and golden brown, add the smoothie that we have prepared previously. Then we stir all the green sauce of the noodles until we get a creamy consistency.
Finally we add to the already creamy mixture, the cheese cut into thin slices or grated and then serve it on the green noodles that we have already prepared, or all mixed, depending on the consumer's taste.
